How To Make Huevos Rancheros Scrambled Eggs In Microwave - step by step
This is a step-by-step tutorial on how to make Huevos Rancheros Scrambled Eggs in the microwave. The recipe is super simple, and you can whip it up in under ten minutes!
Add your black beans & enchilada sauce into a small microwavable mug, & mix.
Cover the mug & place in the microwave on high for 20 secs. (Keep mug in the microwave until egg is ready to be added)
In a separate bowl add your eggs, salt, pepper, & taco seasoning. Whisk well.
Add your cheese. Whisk well.
Pull the mug out of the microwave & add in your egg mixture. DO NOT MIX.
Cover the mug again with plastic wrap & vent. Microwave for 1 min 45 seconds at 70% power. Let it sit in the microwave for 30 seconds.
Carefully mix egg on top to make sure the raw eggs have room to cook.
Cover & microwave for 20 seconds on full. Repeat the last step 2-3 times (or until your egg is fully cooked). Top with toppings & serve.
Hint: I love to use my leftover Taco Bell Mild Sauce packets! I also love to serve this with Hint-of-lime tortilla chips! It takes this recipe to the next level, trust me!

Instructions
