The phrase "easy breakfast" was redefined when I stumbled across microwaved scrambled eggs. There are very few dishes to wash, & it takes less time. Just a whisk, one bowl, & a mug!

What are HUEVOS RANCEHROS EGGS?

Rancher's eggs, also known as Huevos Rancheros, are a typical breakfast dish eaten on Mexican farms. It consists of corn tortillas, fried eggs, and lots of salsa. As I said, Huevos Rancheros is typically made with fried eggs, but I prefer scrambled, so that is how I make mine in this recipe!

These eggs are the solution whenever I want extra protein or a quick, filling dinner, but I don't want to get my whole kitchen dirty by making a meal for one!

LET'S MAKE HUEVOS RANCHEROS INSPIRED SCRAMBLED EGGS

YOU WILL NEED... 

EGGS

MILK

ENCHILADA SAUCE

BLACK BEANS

TACO SEAONING

SALT & PEPPER

CHEDDAR CHEESE

Add your black beans & enchilada sauce into a small microwavable mug, & mix.

Cover the mug & place in the microwave on high for 20 secs. (Keep mug in the microwave until egg is ready to be added)

In a separate bowl add your eggs, salt, pepper, & taco seasoning. Whisk well.

Add your cheese. Whisk well.

Pull the mug out of the microwave & add in your egg mixture. DO NOT MIX.

Cover the mug again with plastic wrap & vent. Microwave for 1 min 45 seconds at 70% power. Let it sit in the microwave for 30 seconds.

Carefully mix egg on top to make sure the raw eggs have room to cook.

Cover & microwave for 20 seconds on full. Repeat the last step 2-3 times (or until your egg is fully cooked). Top with toppings & serve.
