- 1/3 cups black beans
- 1 tbs enchilada sauce
- 2 eggs
- 2 tbs milk (use same tbs from enchilada sauce)
- salt & pepper
- 1/4 tsp taco seasoning
- 1/3 cup shredded sharp cheddar cheese
Optional Toppings:
- Pico De Gallo
- Salsa
- Hot Sauce
- Cilantro
Instructions
- Add your black beans & enchilada sauce into a small microwavable mug, & mix.
- Cover the mug & place in the microwave on high for 20 secs. (Keep mug in the microwave until egg is ready to be added)
- In a separate bowl add your eggs, salt, pepper, & taco seasoning. Whisk well.
- Pull the mug out of the microwave & add in your egg mixture. DO NOT MIX.
- Cover the mug again with plastic wrap & vent. Microwave for 1 min 45 seconds at 70% power. Let it sit in the microwave for 30 seconds.
- Carefully mix egg on top to make sure the raw eggs have room to cook.
- Cover & microwave for 20 seconds on full. Repeat the last step 2-3 times (or until your egg is fully cooked). Top with toppings & serve.
