How To Make The Best Huevos Rancheros Inspired Scrambled Eggs In The Microwave!

This is my go-to Huevos Rancheros Scrambled Eggs In Microwave recipe! It is super simple, flavorful, & delicious!

Ingredients

Scale
  • 1/3 cups black beans
  • 1 tbs enchilada sauce
  • 2 eggs
  • 2 tbs milk (use same tbs from enchilada sauce)
  • salt & pepper
  • 1/4 tsp taco seasoning
  • 1/3 cup shredded sharp cheddar cheese

Optional Toppings:

  • Pico De Gallo
  • Salsa
  • Hot Sauce
  • Cilantro

Instructions

  1. Add your black beans & enchilada sauce into a small microwavable mug, & mix.
  2. Cover the mug & place in the microwave on high for 20 secs. (Keep mug in the microwave until egg is ready to be added)
  3. In a separate bowl add your eggs, salt, pepper, & taco seasoning. Whisk well.
  4. Pull the mug out of the microwave & add in your egg mixture. DO NOT MIX.
  5. Cover the mug again with plastic wrap & vent. Microwave for 1 min 45 seconds at 70% power. Let it sit in the microwave for 30 seconds.
  6. Carefully mix egg on top to make sure the raw eggs have room to cook. 
  7. Cover & microwave for 20 seconds on full. Repeat the last step 2-3 times (or until your egg is fully cooked). Top with toppings & serve.
