Hand Pies .VS. Regular Pies
A pie is a baked dish often encased in pastry dough and filled with various sweet or savory ingredients. Pies are much larger than hand pies; they usually feed up to six people.
A hand pie is typically a half-circle-shaped pastry with a filling that can be either sweet or savory is created by dolloping the filling onto the biscuit-style dough, folding it over, and crimping it close. They could be deep-fried, fried, or baked.
Hand pies are perfect for when you want that yummy pie, but don't want to A) go through the troubles of making a full sized pie & B) have to worry about how the rest of the pie is going to be eaten.
Grab-&-Go!
Hand pies are a simple grab-and-go dessert, and this recipe is great for any time of year. These hand pies are excellent for portion control and do not need plates or serving utensils. They also taste fantastic, whether served warm, at room temperature, or chilled.
This recipe will make 4 large hand pies. If you need more just adjust the recipe accordingly.

How To Make My Apple Hand Pie Recipe In The Air Fryer - Step By Step
The recipe is super simple, will make your mouth water, and you can whip it up in 15 minutes!
Open the crescent dough & unroll the dough. Separate along the perforated lines with a knife.
Using your hands or a rolling pin, make each dough triangle large enough to hold the filling. If you are pulling be careful to not create holes in the dough.
Place the apple pie filling in the center of the dough. Make sure to leave enough room around all of the edges to seal the dough together.
Take another dough triangle & place it on top of the other. Try & line up the edges as best as you can.
Using a fork, crimp the edges together to seal the pie. If there are any holes in your dough, you can use access dough from the corners of the triangles to patch it up.
Spray your air fryer with oil & place your hand pies in it. I usually will do 2 at a time. Cook at 300° F *do not preheat* for 6 minutes.
After the 6 minutes is up, flip the pies carefully using a spatula & cut 3 holes into the top of your pies. These holes allow access moisture to evaporate.
Take your egg wash & heavily apply it onto the tops of your hand pies.
Sprinkle the cinnamon sugar topping onto the hand pies. Don't be too heavy handed on this step. You want that flaky crust to peak through. Pop back into the air fryer again at 300° F for another 6 minutes.
After the 6 minutes, your pie should come out crispy & golden. Take them out of the air fryer & place them on a cooling rack. Serve by themselves or with the topping of your choice!
Hint: When you are giving your hand pies the egg wash make sure you apply a thick layer of the egg wash! The egg is what makes the top of the pie so golden!
How do you seal a hand pie?
The fork method shown above is the easiest way to seal a hand pie. Take a fork & press down on the edges where the two pieces of dough meet, creating a crimp from the fork tongs.
This will ensure that none of the yummy filling comes out!
Change It Up
If you aren't an apple pie person, there is no need to worry. I have you covered!
Simply replace the apple pie filling with the filling of your choice. Keep in mind that the filling could effect the cooking time or the outcome of the dough itself.
If you are choosing to use a filling that contains more liquid than the apple pie filling does, try & separate as much of the liquid as possible.
Other filling options:
- Pumpkin Pie Filling *still use cinnamon in topping*
- Cherry Pie Filling *do not use cinnamon in topping*
- Blueberry Pie Filling *do not use cinnamon in topping*
- Strawberry Pie Filling *do not use cinnamon in topping*
- Peach Pie Filling *still use cinnamon in topping*
- Lemon Pie Filling *do not use cinnamon in topping*
- Pecan Pie Filling *still use cinnamon in topping*
To change the topping, you will need to add or skip adding the cinnamon to the dark brown sugar! If you feel like the cinnamon will pair well with your filling of choice, go for it!
My favorite substitution of filling for the recipe would be peach pie filling & pecan pie filling! They both taste heavenly with the brown sugar cinnamon topping!
Equipment
You will need an air fryer for this recipe!
Be Careful!
When you are flipping & removing you pies in/from the air fryer, make sure to carefully use a spatula!
When the pies are hot they are flimsy & can easily break!

FAQ
Although hand pies and turnovers have many similarities, the crust is the main distinction. Puff pastry dough is typically used to make turnovers. Additionally, turnovers are constructed using a folded piece of dough, similar to a calzone, giving it the appearance of a half-moon.
If you are going to freeze your hand pies, the hand pies should be placed on baking sheets & put in the freezer until they are completely frozen. Until you're ready to bake them, wrap each hand pie in plastic wrap & store it in a freezer bag. When you're ready to bake them, take them out of your freezer to thaw before proceeding with the baking instructions.
