To start your crispy rice sushi waffles, cook the sushi rice according to the package instructions. Preheat your waffle iron to medium, and lightly grease it to prevent sticking. Place 1 ½ cups of the rice into the iron and spread it evenly.

Mash ripe avocados with grated ginger, salt, & pepper until you achieve a smooth & spreadable consistency. Spread an even layer onto the rice.

Next, add a handful of carrot shavings on top of the avocado & ginger layer. You can use a peeler or a slicer to create thin shavings.
