So, eggs in toast, aka eggs in a hole, is a classic breakfast favorite. It's comforting, simple, and oh-so-satisfying. But why settle for ordinary when we can make it extraordinary? That's where the everything bagel comes in, my friend. With a delicious blend of seeds, spices, and all-around awesomeness, it adds a whole new dimension of flavor to our beloved eggs in toast.
Let's gather our ingredients: eggs, an everything bagel (or your favorite type of bread), mayo, pepper, Lawry's seasoning salt, chili flakes, parmesan, lemon zest, & cilantro.
Once we've got everything together, it's time to rock & roll. First things first, we'll slice that everything bagel horizontally, creating a thick slice. Now, we're going to create an egg pocket in the bagel. Take a round cutter or even the rim of a jar and gently press it into the center of the bagel. Twist it a bit, and voila!

Next, spread a thin layer of mayo onto the inside of the bagel then put both halves of the bagel into the skillet / griddle mayo side down.

Once both halves of the bagel are toasting, crack one egg into each bagel half where the middle was cut out.

Season.

Top the egg in a hole off with the parmesan cheese. Let cook until the eggs are almost fully set.

Flip the egg in the hole & cook the top

Top with lemon zest & fresh cilantro. Serve immediately & enjoy!
