Not sure about you, but I love banana bread but not the effort required to make it. So, I made this delicious banana bread mug cake recipe!

Ingredients

Units Scale

Banana Bread

  • 1/3 cup Mashed Banana
  • 1 tbsp Canola Oil
  • 1/4 tsp Vanilla Extract
  • 1/4 tsp Molasses
  • 1 tbsp Dark Brown Sugar
  • 1 tbsp Whole Milk
  • 3 tbsp Flour
  • 1/2 tsp Baking Powder
  • 1 tsp Cinnamon
  • Pinch of Sea Salt

Streusel *SEE NOTES*

  • 1 tsp Flour
  • 1 tsp Dark Brown Sugar
  • 1/3 cup Chopped Candied Nuts

 

Optional Toppings:

  • Chocolate Chips
  • Chopped Salted Nuts
  • Butter

Instructions

  1. In a bowl whisk your banana, oil, milk, molasses, vanilla, & sugar. Mix until fully combined. About 30 seconds.
  2. Add in your flour, salt,  baking powder, & cinnamon. Mix until fully combined. 
  3. In a separate bowl mix up all of the streusel ingredients.
  4. In a microwave safe mug layer both the banana bread batter & streusel, starting with the banana bread batter. 
  5. If you decide to add any toppings, add them now. I typically will use the rest of my streusel as a topping if there is any left & skip adding extra nuts.
  6. Microwave on high for 1 minute & 20 seconds.
  7. Let your Banana Bread Mug Cake sit in the microwave for 3 minutes before removing. 

Notes

* If you would like to skip the streusel simply follow all of the other instructions & cooking times.
