Today I'm about to spill the beans on one of my all-time favorite recipes: the No Peek Chicken & Rice Casserole. You might have seen the one that blew up on TikTok, but I've given it my own twist, and trust me, you're going to love it. After a crazy day, the last thing you want is to spend hours in the kitchen. That's where this recipe swoops in. It's easy, delicious, and practically cooks itself—no peeking allowed!
Knorr herb and butter rice, Bouillon chicken cubes, cream of chicken soup, shredded cheese, seasonings, and, of course, chicken. These ingredients are the heart and soul of my No Peek Chicken & Rice Casserole.
When it comes to presentation, you can keep it simple and serve the casserole straight from the baking dish. It is truly a beautiful dish that doesn't need much fixing! As far as side dishes go, a crisp green salad, steamed vegetables, or a crunchy baguette are perfect sides to balance out the richness of the casserole. Feel free to get creative with your sides to suit your taste!
1
Preheat your oven to 350 °F and spray your oven-safe 9×13-inch baking dish with a non-stick cooking oil of your choice. Add both packets of Knorr rice directly to the dish.
2
Add the cream of chicken soup to the baking dish. Fill up the empty can with water, crumble the bouillon cube into the water, mix, and add the water to the baking dish. Mix the cream of chicken soup, water, and rice together well.
3
Place the chicken breasts evenly on top of the rice mixture, and gently press the chicken down.
4
Season the chicken and top the dish with salt, pepper, onion powder, and garlic powder.
5
Sprinkle the dish with the cheese. Cover the dish with aluminum foil and pop it in the oven. Bake for 1 hour and 30 minutes, or until rice has absorbed all liquid. Make sure the chicken is cooked to 165°F. Top with parsley and serve.
