- 12 Hard Boiled Eggs
- 1/3 cup Mayo
- 1/2 cup Soft Cream Cheese
- 1/3 cup Shredded Sharp Cheddar Cheese
- 1/4 tsp Smoked Paprika
- 3/4 cup Diced Jalapeño Peppers
- Salt & Pepper
Toppings:
- 2 slices Pan Fried Pepper Jack Cheese
- 1-2 slices Bacon, Chopped Small
- Chives
Instructions
- Cut your hard boiled eggs in half vertically, & separate the yolks from the whites. Places the yolks in a bowl. Set the whites aside.
- Add the cream cheese & mayo into the bowl with the egg yolks & mix until fully combined.
- Add the cheddar cheese, diced jalapeños, smoked paprika, salt, & pepper into the egg yolk mixture & mix until fully combined. Set mixture in fridge for 10 minutes to firm up.
- While the filling is in the fridge, fry your pepper jack cheese. This is done simply by placing a slice of cheese into a nonstick pan on medium high until the cheese is golden! Flip & wait until other side is golden as well. When the cheese slices are done, wrap them in paper towels to absorb any access oils.
- Once the 10 minutes is up, fill your egg white back up with your deviled egg mixture. I like to use a miniature ice cream scoop for this.
- Garnish your eggs with chives, bacon bits, & a shard of fried cheese & serve! Place in fridge if you aren't serving immediately!
