Ingredients

  • 1 Everything bagel (sliced in half)
  • Mayo
  • 2 eggs
  • Lawry's seasoning salt
  • Pepper
  • Chili flakes
  • Parmesan cheese
  • Lemon zest
  • Cilantro

Instructions

  1. Preheat a griddle or skillet to medium heat.
  2. Slice the everything bagel horizontally. Then, take a round cutter or even the rim of a jar and gently press it into the center of the bagel.
  3. Next, spread a thin layer of mayo onto the inside of both halves, then put them on the skillet / griddle mayo side down.
  4. Once both halves of the bagel are toasting, crack one egg into each bagel half where the middle was cut out.
  5. Season the egg with Lawry's salt, pepper, & chili flakes.
  6. Top the egg in a hole off with the parmesan cheese. Let cook until the eggs are almost fully set.
  7. Flip the egg in the hole & cook the top for about 10-15 seconds.
  8. Top with lemon zest & fresh cilantro. Serve immediately & enjoy!
