- 3 cups cooked sushi rice
- 1 avocado
- 1 tsp ginger paste
- 1 Carrot ( use veggie peeler to create the shavings)
- 1/2 tsp sesame seeds
- Chili crunch oil
- Salt & pepper
- Seaweed *optional for serving*
- Crunchy onions *optional for serving*
Instructions
- To start your crispy rice sushi waffles, cook the sushi rice according to the package instructions. Preheat your waffle iron to medium, and lightly grease it to prevent sticking. Place 1 ½ cups of the rice into the iron and spread it evenly.
- Mash ripe avocados with grated ginger, salt, & pepper until you achieve a smooth & spreadable consistency. Spread an even layer onto the rice.
- Next, add a handful of carrot shavings on top of the avocado & ginger layer. You can use a peeler or a slicer to create thin shavings.
- Drizzle as much chili crunch oil onto the other fillings as you would like.
- Then, add the rest of the rice in order to cover all of the other fillings. Sprinkle some sesame seeds on top & close the waffle iron.
- Cook for up to 10 minutes, or until the rice is golden brown & crispy. Serve with seaweed, crunchy onions, & dipping sauce of your choice.
