Meatballs:
- 1/2 lb. ground turkey
- 1/2 lb. ground spicy Italian sausage
- 1/2 cup shredded mozzarella
- 4 cloves of garlic (grated)
- 1 tsp. Italian seasoning
- 1/2 tsp. red chili flakes
- 1 crumbled chicken boullion cube
- 1 cup fresh chopped parsley
- Salt & pepper
- 2 tbsp. salted butter
Sauce:
- 2 tbsp. butter
- 4 cloves of garlic (grated)
- 1 yellow onion (diced)
- 1/3 cup vegetable or chicken broth
- 5-ounce jar of sun-dried tomatoes *Julienne cut (drained of the oil)
- 1 3/4 cup heavy cream
- 3 cups Kale
- 1/2. cup of grated parmesan cheese
- Salt & pepper
Instructions
- Start by heating up a large pan on medium heat. In a bowl, mix together the meats, garlic cloves, Italian seasoning, red chili flakes, pepper, a chicken bouillon cube, parsley, and mozzarella cheese.
- Once everything is mixed together, use your hands to form the meat mixture into meatballs. You want each meatball to be 1 1/2 inches.
- Melt 2 tbsp. of the butter in the large pan, and then place the meatballs in the pan. Cook until there is no pink left in the middle and the meatballs are golden brown, about 8–10 minutes on all sides. Once they are cooked, set them aside on a clean plate.
- In the same large pan that the meatballs were cooked in, melt the remaining butter and add the remaining garlic. Cook until the garlic is fragrant. Then add the onion and cook until it is translucent.
- Next, add the sun-dried tomatoes, vegetable broth, and heavy cream to the pot. Using a spatula, preferably a wooden one, scrape the bottom of the pan to get all of the remains left from cooking the meatballs and mix it into the sauce.
- Season with salt and pepper, and stir. Add in the kale and bring to a simmer. Make sure that the kale is fully cooked in the sauce, about 5-10 minutes.
- Add the parmesan to the sauce and mix until it is melted. Lastly, add the meatballs back into the sauce to rewarm them. Serve over pasta, rice, or alone, and enjoy!
