Ingredients

Bagels:

  • 2 everything-seasoned bagels
  • 4 tsp. regular mayo (1 tsp. per bagel half)

 

Sandwich:

  • 2 eggs, cooked to your preference
  • Red onion, thinly sliced
  • 2 cups arugula
  • 1/4 cup cilantro, roughly chopped
  • 2 slices pepper jack cheese
  • 1/2 cup sundried tomatoes, drained of the oil.
  • 6-8 slices beef shaved steak, seared golden brown. (3-4 slices per sandwich)
  • Lime zest
  • Chipotle mayo
  • 1 avocado, sliced
  • Montreal Steak Seasoning
  • Salt
  • Pepper

 

Instructions

  1. Prep all of the veggies and, set aside. Also, season your both sides of meat with the Montreal steak seasoning at this time.

  2. Heat a skillet over medium heat. Cook the steak until it is golden brown. A few minutes on each side. Set aside.

  3. Spread the regular mayo on each half of the bagels. Toast the bagel in the skillet the steak was cooked in. Set aside to cool.

  4. In a skillet, cook the eggs to your liking. I scrambled mine.

  5. Mash up the avocado and lime zest, then spread it on the bottom half of the bagels. Sprinkle salt and pepper on top of the avocado.

  6. Spread a layer of the chipotle mayo on the top half of the bagels.

  7. Layer the remaining sandwich ingredients on top of the bottom half of the bagel. Serve and enjoy!
