Pumpkin Bread:

  • 1 (15 oz) can of pumpkin puree
  • 2 tbsp. prune puree
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1/2 tsp vanilla extract
  • 1 3/4 cup flour
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. pumpkin spice
  • 1/2 tsp. salt

 

Streusel Topping:

  • 1/2 cup flour
  • 1/4 cup granulated sugar
  • 1/4 tsp. pumpkin spice
  • 1/4 tsp. cinnamon
  • 1/4 cup salted butter, melted
  • 1/4 cup pecan pieces

Instructions

  1. Preheat the oven to 325°F. In a bowl, mix all of the wet ingredients and set aside.
  2. In a separate bowl, mix together all of the dry ingredients.
  3. Now, gradually add the dry mixture to the bowl with the wet mixture, and mix until fully combined.
  4. Mix together all of the ingredients for the streusel in a separate bowl. You want the texture of the streusel to be like a crumble.
  5. Pour the batter into a lined loaf pan and top with the streusel. Bake in the oven for 1–1.5 hours or until a toothpick comes out of the middle of the loaf clean.
