Sweet Maple Onion Bacon Jam

Bacon jam is the kind of thing that makes you wonder how you ever lived without it, and once you've tried it, there's no going back!

Ingredients

 

  • 6 slices of thick-cut bacon

  • 1 large white onion, sliced

  • 1 jalapeño, sliced

  • 2 garlic cloves, minced

  • 1/4 cup apple cider vinegar

  • 1/4 cup brown sugar

  • 1/4 cup of maple syrup

  • Salt and pepper to taste

Instructions

  1. Grab a medium saucepan and set it over medium heat. Toss in those glorious strips of bacon and cook until they're irresistibly crispy. Transfer the bacon to a paper towel-lined plate.
  2. Turn the heat down to medium-low and throw in the onions, jalapeños, and garlic. Stir them often, letting them caramelize, which should take about 15 minutes.
  3. Stir in the brown sugar, maple syrup, vinegar, salt, pepper, and the bacon. Bring to a simmer, then reduce the heat to low. Let it cook until the liquid has reduced and thickened, and the onions have turned into a jammy consistency. This should take about 7 to 10 minutes.
  4. Let the mixture cool down a bit before transferring it to a jar. Enjoy!
