6 slices of thick-cut bacon

1 large white onion, sliced

1 jalapeño, sliced

2 garlic cloves, minced

1/4 cup apple cider vinegar

1/4 cup brown sugar

1/4 cup of maple syrup

Salt and pepper to taste
Instructions
- Grab a medium saucepan and set it over medium heat. Toss in those glorious strips of bacon and cook until they're irresistibly crispy. Transfer the bacon to a paper towel-lined plate.
- Turn the heat down to medium-low and throw in the onions, jalapeños, and garlic. Stir them often, letting them caramelize, which should take about 15 minutes.
- Stir in the brown sugar, maple syrup, vinegar, salt, pepper, and the bacon. Bring to a simmer, then reduce the heat to low. Let it cook until the liquid has reduced and thickened, and the onions have turned into a jammy consistency. This should take about 7 to 10 minutes.
- Let the mixture cool down a bit before transferring it to a jar. Enjoy!
