- 8 oz. monterey jack cheese
- 16 oz. pepper jack cheese
- 1/2 of a red onion
- 2 tbsp. canola oil
- 1 tbsp. flour
- 1 cup heavy whipping cream + more if needed
- 1/4 tsp. cumin
Toppings:
- Cilantro
- Pico de Gallo
- Red chili flakes
Instructions
- Start by dicing half of a red onion while the oil heats up in a pot on medium heat. You want to cook the onions until they are golden brown.
- Cut your cheese into equal sized cubes & set aside while your onions are browning.
- Add the flour in with the onions & stir.
- Add the heavy cream in with the onion & flour mixture. Stir until fully combined.
- Gradually add the cheese cubes in a few at a time waiting until the previous cubes are melted until adding the next handful.
- Once the cheese is completely melted, add in the cumin & mix. If the queso is too thick for your liking, you can add more heavy cream 1 tablespoon at a time until you are happy with the consistency.
- Move the queso into a serving bowl, top with Pico de Gallo & cilantro & serve immediately. Enjoy!
