A Cheese Lover Approved Recipe For Queso

Ingredients

Units Scale
  • 8 oz. monterey jack cheese
  • 16 oz. pepper jack cheese
  • 1/2 of a red onion
  • 2 tbsp. canola oil
  • 1 tbsp. flour
  • 1 cup heavy whipping cream + more if needed
  • 1/4 tsp. cumin

Toppings:

  • Cilantro
  • Pico de Gallo
  • Red chili flakes

Instructions

  1. Start by dicing half of a red onion while the oil heats up in a pot on medium heat. You want to cook the onions until they are golden brown.
  2. Cut your cheese into equal sized cubes & set aside while your onions are browning.
  3. Add the flour in with the onions & stir.
  4. Add the heavy cream in with the onion & flour mixture. Stir until fully combined.
  5. Gradually add the cheese cubes in a few at a time waiting until the previous cubes are melted until adding the next handful.
  6. Once the cheese is completely melted, add in the cumin & mix. If the queso is too thick for your liking, you can add more heavy cream 1 tablespoon at a time until you are happy with the consistency.
  7. Move the queso into a serving bowl, top with Pico de Gallo & cilantro & serve immediately. Enjoy!
